Sue teaches people how to make a month’s worth of probiotics for as little as eight rand – the cost of a single cabbage! For the DIY vegan or health enthusiast it provides a rush of lactobacillus plantarum. The cabbage and salt base converts to lactic acid when it is stored in an air tight container for two weeks. The resultant mixture can be juiced and strained if you hate eating sauerkraut! She will show us how to make a variety of tasty foods like Kimchi or lemon pickle that are rich in all sorts of probiotics and of course, lactic acid.
Lactic acid has nothing to do with milk. It is a strong sterilizing compound. It suppresses harmful micro organisms and breaks down and ferments the fibre we eat such as lignin and cellulose. It also produces antibacterial compounds that are known as bacteriocins that attack pathogenic bacteria, yeasts and moulds.
